Fresh Salsa

I know it's been a while since I've posted a new recipe, but man have I been busy this summer! Hopefully things will go back to normal and I can start posting at least once a week again here soon.

I got this recipe from food network, but altered it a little bit so I could use fresh garden ingredients, which I have an abundance of right now (it originally called for some canned ingredients). Peppers are super easy to grow, so I chose yellow, chocolate, and green bell peppers as well as a variety of chili peppers and tomatoes for our garden this year.

2.5 lbs tomatoes, diced
2 green chilies, diced
1/2 cup fresh cilantro
1/4 cup onion, diced
2 garlic cloves, minced
1 jalapeno, diced (with seeds and membrane)
1/4 tsp ground cumin
1/4 tsp salt
1/4 tsp sugar
1/2 lime, juiced
  • Combine all ingredients in a large food processor.
  • Pulse 20-25 times, until desired consistency is reached.
  • Refrigerate for one hour before serving.
