White Cheese Sauce

I bought some chicken ravioli that just looked delicious at Costco, the only problem was I needed something to go on it. For some reason, eating plain pasta is just weird to me. My husband really likes white pasta sauce so I looked up a how to make a basic white sauce and went from there. This is what we came up with!

2 Tbsp butter
2 Tbsp all-purpose flour
1 cup milk
1/4 cup mozzarella cheese, shredded
1/4 cup parmesan cheese, shredded
1/4 tsp white pepper

  • In a medium sauce pan melt the butter over medium heat and combine with flour.
  • Add the milk, whisking, until the desired consistency is reached. Add a little more to make it slightly runny.
  • Add the pepper, then remove from heat.
  • Add the cheeses, continuing to whisk until completely melted.
  • Serve over desired pasta and enjoy!

Easy Baked Potatoes

Surprisingly I made baked potatoes at home for the first time ever this last week! I wanted a quick dinner so I grabbed some steaks out of the freezer and was looking for something to go with them. I figured potatoes couldn't be too hard so I decided to give it a try. Not only were they super easy, but delicious as well!

4 large russet potatoes
Butter
Sour cream
Cheddar cheese, shredded
Fresh chives, sliced
Bacon, crumbled
Olive oil
Kosher salt
  • Preheat oven to 425 degrees
  • Rinse and dry potatoes, then coat with olive oil.
  • Season with kosher salt and wrap in aluminum foil.
  • Place on baking sheet and bake for 45-60 minutes, until soft when poked with a fork.
  • Remove from oven, unwrap, and slice open.
  • Top with desired toppings and enjoy!

Smoked Salmon Dip

I bought a huge pack of smoked salmon from Costco the other day (which is delicious just by itself) but decided I was in the mood for some dip too. I looked up a few recipes for it, altered them to my taste and for what ingredients we had, and this is what I came up with!

6 oz smoked salmon
8 oz cream cheese
1/2 cup sour cream
1 Tbsp fresh squeezed lemon juice
1 Tbsp fresh minced rosemary and/or dill
1/2 tsp kosher salt
1/4 tsp fresh ground black pepper
  • Mix all ingredients together to desired consistency.
  • Serve with crackers and enjoy!
