Parmesan Crusted Chicken

I've been trying to get back to cooking more at home again lately so I tried out this delicious chicken dish. It was definitely spicier than I expected, but very good!

I doubled the mustard mix and panko mix because there just wasn't quite enough for the chicken. Doubling was the perfect amount to coat the chicken.

2 Tbsp dijon mustard
1/2 tsp thyme leaves, chopped
1/2 tsp kosher salt
1/4 cayenne pepper
4 - 8 oz chicken pieces
3/4 cup freshly grated parmesan cheese
3/4 cup panko

  • Preheat the oven to 450 degrees.
  • Mix the mustard, thyme, salt, and cayenne in a medium sized shallow bowl.
  • In another medium sized shallow bowl mix the parmesan and panko.
  • Dredge the chicken in the mustard mixture then coat with the panko mixture.
  • Place the chicken on a cooling rack on a cookie sheet.
  • Bake for approximately 20 minutes, chicken should be cooked through and golden on the outside.
